No Bake Cheesecake Recipe

Desserts usually have you in the kitchen tossing flour and baking. As a single girl, I rarely have the time to learn how to make a perfect cake so I opt for something a little less time consuming. This cheesecake recipe is easy to make! No eggs, no baking, and no cheesecake pan. The prepping is only 15 minutes.





The only thing I would say is that if you don't have the proper tools in your kitchen you might fall short. I went to my local grocery store and picked up a hand mixer. I have a cheap $17 mixer with three speeds and that's pretty much all you need unless you're doing some heavy cooking.



Growing up, icebox cheesecake in southern terms, was one of my favorite desserts. My aunt couldn't get me to eat pies so she would make this instead. I don't like pies.

If you would like for me to make a baked cheesecake recipe I can do that also. Red Velvet is my favorite so I would do that recipe. 




















































If you have a little extra filling which I always do...just buy the small, single serving crust and you're good to go.







My aunt's hack:


For favor extract...You can use lemon extract w/ vanilla or you can use cream of tartar. 








RECIPE:






2 (8 oz) packs cream cheese, room temperature - let set for 16-24 hours.


14 oz. sweetened condensed milk


⅓ cup fresh lemon juice  (2 and 1/2 lemons)


1 teaspoon vanilla extract


1 pie crust 









Prep Work: 15 mins


- Hand mixer needed





Roll lemons until soft. 


      **You can microwave them but wait at least 30 mins til cool to squeeze (lemons must be room temp).






Mix cream cheese and sweetened condensed milk on medium speed until creamy.





Mix in lemon juice and vanilla extract.





Pour cream cheese mixture into pie crust.





Refrigerate for at least 6 to 12 hours. 





You can add toppings if you choose.
