Cilantro and Lime Rice

Cilantro and lime rice became a signature food for me when I would visit Chipotle. At first I did not really like it and so I keep eating because it was the only rice they served at the time. As time went along I grew to love it and I loved it so much I started making it at home. Here's my version of a fast food signature dish.














































Recipe:


1 cup extra long grain rice or basmati rice

1/2 lime - juice

2 cups water

1 tsp salt

3 tbsp fresh chopped cilantro

3 tsp butter/oil


COOKING: 

Put oil in warm skillet, then toss in rice, let absorb - yellow, then add water.

Cook until rice is done.


Take lime juice in separate bowl and add salt. Let the salt fully dissolve in the lime juice.


Chop your cilantro.


Get a big bowl with a lid and add all the ingredients. Shake everything until mixed. If not mixed enough just stir.
